Edamame Basil Spaghetti
An Easy Weeknight Recipe from The Okinawa Diet Plan.
Serves 4
Ingredients
- 1 cup frozen soybeans (not in pods)
- 8 ounces dry whole-wheat spaghetti
- 4 cloves garlic
- 1 cup fresh basil leaves
- t tablespoon olive oil
- Pinch of salt
- Defrost soybeans in the microwave. Place them in a large bowl.
- Cook the spaghetti according to directions on package.
- In a food processor, process the garlic, basil, olive oil, salt and 1/3 cup water until smooth.
- Add the spaghetti and basil sauce to the bowl with soybeans and toss until evenly coated.
