Edamame Basil Spaghetti

Serves 4

Ingredients

  • 1 cup frozen soybeans (not in pods)
  • 8 ounces dry whole-wheat spaghetti
  • 4 cloves garlic
  • 1 cup fresh basil leaves
  • t tablespoon olive oil
  • Pinch of salt
  1. Defrost soybeans in the microwave. Place them in a large bowl.
  2. Cook the spaghetti according to directions on package.
  3. In a food processor, process the garlic, basil, olive oil, salt and 1/3 cup water until smooth.
  4. Add the spaghetti and basil sauce to the bowl with soybeans and toss until evenly coated.
